They’re called mochi! It’s a Japanese dessert made with mochigome, which is a glutinous rice. The rice gets pounded into a paste, then shaped into whatever shape the person making them desires (all the ones I’ve ever had are round)

Sometimes they’ll be made with ice cream in the middle, but others will have a flavour paste in the middle
