The first one that comes to mind is one of my favourite anime’s Cowboy Bebop! It’s an absolute classic, the animation is insanely good too. Now iirc Evangelion is also not adapted from manga and it’s also a rad classic.

I believe an alternate retelling of it was released in manga form at around the same time the anime was released but it’s not the same story basically? It’s a little confusing but it’s regarded as just being straight to anime 
and the anime did come first from what I can see!
