I usually don’t have this problem because most of the time, I tend to strongly prefer one over the others.
In Galactic Game, I did have a bit of a problem in the beginning because Kin was so sweet to my character, but I was more drawn to Silvio, so I felt really bad when I had to reject Kin.

I have been stuck between multiple love interests. Not on Episode, at least not that I remember, but often on Choices because they’re good options in their own ways. So I usually have to replay the story so I can see how things go differently and can choose a different LI.
Yes. I was reading Tangled Love Classic, and I had a difficult time choosing between Brandon and Jace. I chose Jace in the end, since 1) he’s cuter than Brandon haha, and 2) he’s sweet to Bella. I felt sympathy for Brandon, though, which was why I had such a hard time 
Oh I forgot about that! It was so hard deciding between them! Now I don’t even remember which one I went with.
Hmm, yes. In Times Square, in the end I had to choose between Liam and Evian for Ramona, the main character. This was difficult because both were sweet and amazing. I didn’t know what to choose so I chose the third option i.e. go G.I. Joe and live alone and freely.

I hate when the authors say at the start of the story that there will be ONLY one LI, but till the end, she introduces like 2 others like that’s a breach of contact, woman!
