it could be projection as projection is projecting their thoughts and impulses onto another person. if she feels that other people want to appear well off, when they aren’t, that could be an conscious feeling on how she feels herself.
Rationalization is making their actions seem sensible or reasonable. If she feels as if she is only abiding by the laws of society and expectations or that’s how the world is meant to be she would rationalize her thoughts in that sense. Unconsciously she may get anxiety or guilt from the realization that society shouldn’t be that way and rationalizes her role and making herself complacent. Freud would also see this as her being controlled by her superego - that part of her personality which attempts to follow society rules to the extreme. it’s the part of your personality that makes you feel guilting for thinking about skipping in front of someone in a line.
Displacement is deflecting an impulse from one target to another less threatening one. She may be displacing her feelings by being unconsciously frustrated by her position in society but instead of taking her frustration or distaste out on someone like government or the rulers through action or protests she deflects it to perhaps other lowborn people who would not seem as much of a threat.

I don’t care pricks eat apples, so it’s fitting she throws Mr fruit man an apple to his head. From now on an apple will magically appear each time they meet
Oh she will just tell him that “You shouldn’t have shown me it then, you can’t really expect anything else, ESPECIALLY after you took the time to know me and yet you never warned me not to”.
He’s not going to warn her not to take apples from the orchard because it’ll be a joke to him lol, he’ll say “Have you taken that apple from my orchard, you wench?” But in a joking tone, to make both of them smile but not really laugh out loud
Well, she most likely hasn’t heard of that yet, or she did but disregarded it as a rumor
But if she does hear it, her perception would probably be a bit shattered then. She currently sees the queen as someone above her, considering her title. If she finds out she used to be caste six, it would probably be a mix of jealousy, wondering if the queen really deserved her position and then Daisy questioning if she was even right in the first place
